Spicy Carrot Salad Monday, January 6, 2014


2 Cups Carrots cut into thin julienne strips
½ Cup Red Onion, Sliced Very Thin
2 Tbs Olive Oil
Juice from ½ a Lemon
¼ Cup Chopped Cilantro
1 Tbs Chopped Garlic
¼ tsp Cumin
1/8 tsp Cinnamon
½ tsp Paprika
½ tsp Harissa or other high quality hot sauce
Salt and Pepper To Taste


Mix all ingredients together and refrigerate overnight. Season with salt and pepper before serving. You can mix the carrots with a little lettuce mix to round it out or leave it as is.
