Orange Sweet Potato Casserole Tuesday, November 26, 2013
3 cups (usually about 3 pounds) sweet potato, roasted and mashed
1 cup light brown sugar, firmly packed
½ cup orange juice, freshly squeezed
½ stick butter, melted
2 tablespoons fresh lemon juice
3 tablespoons orange zest
¼ teaspoon ground nutmeg
½ teaspoon cinnamon
Kosher salt and black pepper to taste
Preheat oven to 350F. Butter a 9x13 casserole dish. Combine all ingredients in a large mixing bowl, stirring to combine. Taste and adjust for salt and pepper.
Spoon sweet potatoes into casserole dish. Bake for about 45 m minutes until hot through and lightly golden.
