Easy Good Luck Soup Tuesday, December 31, 2013

Ingredients

4 or 5 slices hog jowl bacon, cut into small pieces
8 oz cubed ham
1 (6 ounce) package uncooked long grain and wild rice mix, with
seasoning packet
1 16 oz pkg frozen chopped mustard greens
2 (15 ounce) cans black-eyed peas, drained
2 (14.5 ounce) cans diced tomatoes, with liquid
2 (14 ounce) cans chicken broth
2 cups water
salt and black pepper to taste

Directions

In a large pot, fry the bacon until crisp. Remove bacon with a slotted spoon. Add greens to hot grease from bacon and stir until broken up. Stir in cubed pork. Add rice mix with seasoning packet, black-eyed Peas, tomatoes, chicken broth and water. Bring to a boil and reduce to simmer 20 minutes, or until rice is tender. Season to taste with salt and pepper. Sprinkle individual servings with the crisp hog jowl bacon just before serving.
