2 ¼ cups uncooked oat bran cereal
¼ cup chopped prunes (raisins will work)
1 TBSP baking powder
1 tsp baking soda
¼ tsp salt (optional)
¾ cup buttermilk
2 eggs, slightly beaten
1/3 cup honey (or molasses)
2 TBSP unsweetened applesauce
Heat oven to 400 deg. Line 12 medium muffin cups with paper baking cups. (or spray bottom only with baking spray. Combine dry ingredients and mix. Mix buttermilk, eggs, honey and applesauce. Add to dry ingredients and stir just to mix. Fill prepared cups ¾ full and bake 15 to 17 minutes or until brown.
Food City has two varieties of oat bran cereal. Either will work in this recipe but the finer ground Mother’s bran seems to work better.
