4 large firm green tomatoes
salt and pepper
½ cup brown sugar
¾ cup coarse butter cracker crumbs
4 TBSP butter
Slice the tomatoes into ½ inch slices. In a flat pan with sides, place the slices with a minimum of overlap. Season with salt and pepper. Divide brown sugar evenly placing about ½ TBSP on each slice. Divide the cracker crumbs evenly on the slices. Dot each with butter. Bake in a 350 deg oven until tender but still firm, about 25 to 35 minutes. Serve warm or cold.
