Garden Vegetable Chopped Salad Monday, August 23, 2010

Ingredients

6 cups romaine lettuce, chopped (That is one bag of Fresh Express
romaine)
1 cup broccoli, chopped
1/2 cup carrots, matchstick or shredded
1 small zucchini, chopped
1 medium tomato, chopped
1 fresh cucumber, chopped
5 or 6 green onions, sliced thin
1/2 cup Cheddar cheese, shredded
your favorite salad dressing or several favorites to pass

Directions

Toss vegetables and top with cheese. Allow guests to select dressing and amount of dressing. If you wish, scatter some croutons on top. Or if you are a mind to, sprinkle on some cubed, cooked chicken and make it a meal. Some crumbled bacon wouldn’t hurt. Just pick the vegetables that look best, chop them up and toss them together and add whatever catches your fancy and you have a great salad or even a meal. Now about the cheese. If you like feta better than Cheddar, then use it. Or maybe you would prefer blue cheese. Go right ahead. I personally like blue cheese with a nice low fat (or no fat) vinaigrette dressing. But I would suggest that it is fun to make the basic salad and put it on a tray with a choice of cheese (and maybe some chopped hard boiled eggs) and a choice of dressing and letting each person dress their own.
