Fresh Vegetable Fritters Wednesday, August 25, 2010


2 cups okra, sliced very thin
¾ cup green tomato, chopped fine
3 or 4 green onions, sliced thin
½ cup cornmeal mix
1 egg
¼ cup milk
½ tsp hot sauce
½ to ¾ cup salad oil


Mix together all ingredients except the oil. Heat oil in a heavy skillet until medium hot. Scoop up a generous TBSP of the mix and drop into hot oil. Cook at medium high for 3 or 4 minutes or until brown on the edges. Turn and cook an equal amount of time on the other side. Drain on paper towels and serve hot.
