Orange Glazed Chicken Thursday, August 26, 2010


8 boneless, skinless chicken breast halves
8 oz orange marmalade
1 cup onion, chopped
2 cloves garlic, minced
2 TBSP soy sauce
4 TBSP vegetable oil
1 cup grated white cheese


In a heavy skillet, heat the oil to medium high. Brown the chicken breast on both sides. Remove to a 9x13 casserole in a single layer. Saute onion and garlic until the onion starts to brown in the pan where you sautéed the chicken. Add the marmalade and soy sauce and stir just until blended. Pour evenly over chicken. Place in a 400 deg oven and bake about 15 minutes. Remove and sprinkle cheese evenly over top. Return to the oven about 5 minutes or until the cheese is melted. Serve hot.
