Banana, Oat and Bran Cookies Tuesday, August 31, 2010


2 ripe bananas, mashed
1 1/2 cup flour
1 cup wheat bran
1 cup rolled oats
1/2 cup packed brown sugar
1/2 cup low-fat plain yogurt
1/8 cup real maple syrup
1/2 cup egg substitute (or 2 egg whites)
1 tsp ground cinnamon
1/2 tsp salt
1/2 tsp baking powder
1 cup raisins (or chopped dates or Craisins)


Preheat oven to 350 deg. In a mixer bowl, beat mashed bananas, egg substitute, brown sugar, maple syrup, yogurt, and cinnamon. Combine the remaining dry ingredients: flour, oats, wheat bran, salt and baking powder in a separate bowl. Combine dry ingredients with wet mixture. Add in raisins (or chopped dates, or Craisins). Drop cookie dough by tspfuls onto a baking sheet sprayed with cooking oil spray. Bake for about 12 minutes or until dry to the touch and feel firm. They will not brown. Cool on a rack.
