Black and White Bean Salad Monday, September 6, 2010
Ingredients
2 15 oz cans black beans, rinsed and drained
2 15 oz cans cannellini beans, drained and rinsed
1 green bell pepper, chopped
1 red bell pepper, chopped
1 red onion, chopped
1/4 cup olive oil
1/2 cup red wine vinegar
1 clove crushed garlic
1/4 cup fresh cilantro, chopped
1/2 TBSP ground cumin
1/2 tsp hot pepper sauce
1 tsp each salt and black pepper
Directions
In a large bowl, combine beans, bell peppers and red onion. In a small bowl, whisk together olive oil, red wine vinegar, garlic, cilantro, cumin, salt and black pepper. Season to taste with hot sauce. Pour olive oil dressing over vegetables; mix well. Chill thoroughly, and serve cold.
