Apple Cranberry Pandowdy Friday, October 29, 2010


2 cans apple pie filling
1 cup cranberries
¼ cup brown sugar, packed
¼ cup water
1 refrigerated pie crust
milk or cream
2 TBSP sugar
½ tsp cinnamon


In a medium pot, place cranberries, brown sugar and water. Bring to a boil and reduce heat until the mixture comes to a boil. Reduce heat and allow to continue to cook, stirring occasionally, until the mixture begins to thicken. Stir in apple pie filling. Pour this mixture into a 9x13 inch baking pan which has been sprayed with cooking oil spray. Tear pie crust into irregular pieces about 3 inches across and lay on top of hot apple mixture overlapping as necessary to use all the dough. Brush with milk (or cream) and sprinkle with the sugar and cinnamon. Bake in a 350 deg oven about 30 to 40 minutes or until the crust is brown. Serve warm or at room temperature.
