Sweet Potato Cream Cheese Pie Monday, November 1, 2010
1 large sweet potato (about 1 cup), baked, peeled and mashed
8 oz pkg cream cheese
1 cup sugar
1 TBSP vanilla
2 tsp nutmeg
unbaked 9 inch deep dish pie shell
In a large mixer, using the flat blade, combine the sweet potato and the cream cheese. Beat in the sugar. Add eggs, one at a time, beating between each egg. Stir in the vanilla and the nutmeg and turn into the pie shell. Bake in a preheated 350 deg oven about 60 minutes or until puffed and brown. Allow to cool before slicing. It will settle as it cools.
