8 oz mushrooms, chopped (any variety. I personally like baby bellas)
1 large onion, chopped
1 tsp olive oil
3 cloves garlic, minced
2 TBSP soy sauce
Heat olive oil in a non-stick skillet over medium high heat. Add onions and cook until they start to brown. Stir in garlic and cook for just about 30 seconds. Stir in mushrooms. Continue to stir occasionally until mushrooms are coated with the oil and start to give up their liquid. Pour soy sauce over and continue to cook, stirring, until almost all liquid has cook out. May be served hot or cold.
