Spiced Black Walnut Cake Friday, November 12, 2010


1 box spice cake mix
1 1/3 cup buttermilk
3 eggs
1/3 cup vegetable oil
2 TBSP maple syrup
½ cup black walnuts


Preheat oven to 350 deg. Spray a Bundt cake pan with baking spray. In mixer bowl, combine cake mix, buttermilk, oil, eggs and maple syrup. Blend at low speed for about 30 seconds. Increase speed to medium and beat for 2 minutes. Stir in walnuts and turn into the prepared pan. Bake for about 40 minutes or until cake tests done. Cool in pan for 15 minutes. Turn out onto a wire rack and allow to cool completely.

You can simply sprinkle this cake with powdered sugar or heat a 16 oz container of white frosting in the microwave stirring a couple of times until it is of pouring consistency. Place the cake, still on the cooling rack, over a cookie sheet. Pour frosting evenly over the cake and allow excess to flow off. Cake should stay over the baking sheet until icing has set.
