1 flour tortilla as big as your spring form pan
1 lb ground beef
1 medium onion, chopped
1 pkg taco seasoning
2 cups Mexican blend cheese
3 cups milk
In a heavy skillet fry gound beef until it is browned. Add onion and cook until it is translucent. Drain completely. Stir in taco seasoning. Fit tortilla into spring form pan to cover the bottom. Using a square of heavy duty foil, press tightly around bottom of pan to avoid leaks. Place pan on a baking sheet with sides. Add ground beef mixture. Sprinkle cheese evenly over meat. Beat milk and eggs together and pour slowly over to cover. Place in a preheated 425 deg oven and bake for 10 minutes. Reduce heat to 350 and bake about 45 minutes more or until the top is puffed and brown. Remove and allow to cool at least 5 minutes before removing sides of pan and serving.
