Ingredients

2 cups self rising corn meal mix
1 10 oz can diced tomatoes with green chilies
1 cup cheddar cheese, grated
8 oz lean ham, chopped
½ cup milk (approx)

Directions

Mix all ingredients except the milk. Add enough milk to make a stiff batter. Turn into miniature muffin tins which had been sprayed with cooking oil spray. Bake in a 400 deg oven about 20 minutes or until brown. Serve hot. Makes about 4 dozen.
