Hog Jowl Bacon Cracklin Cornbread Tuesday, December 28, 2010
Ingredients
8 oz hog jowl bacon cut into ¼ inch dice
2 cups self rising corn meal mix
1 egg
¾ cup buttermilk, approx
Directions
In a heavy skillet fry the bacon over medium heat until it is brown and crisp. Scoop out the bacon with a slotted spoon and add to corn meal. Add 2 to 3 TBSP of the rendered bacon fat to the meal. Stir to mix. Add the egg and enough buttermilk to make a batter which is too thin to hold its shape. Pour into a heavily greased 9 inch cast iron skillet (or a 9 inch glass baking dish) and bake in a preheated 400 deg oven about 25 minutes or until golden brown. Serve hot.
