A Campbell's Kitchen recipe
1 1/4 cups Pace® Salsa Verde
1 1/2 pounds ground beef
3/4 cup finely crushed tortilla chips
4 green onions, minced (about 1/2 cup)
Heat the oven to 350 deg. Thoroughly mix 3/4 cup salsa, beef, egg, tortilla chips and green onions in a large bowl. Shape the mixture firmly into 16 meatballs. Place the meatballs into a 3-quart shallow baking dish. Top each with 1 tsp salsa. Bake for 30 minutes or until the meatballs are cooked through. Serve with the remaining salsa.
TIP Mini Meatballs: Prepare the beef mixture as directed above. Shape the mixture firmly into 48 mini meatballs. Place the meatballs into a 4-quart shallow baking dish. Bake at 350°F. for 15 minutes or until the meatballs are cooked through. Serve with the remaining salsa.
