Cornbread Casserole Wednesday, January 19, 2011


1 16 oz can creamed corn
1 cup corn meal mix
2 TBSP vegetable oil
1 cup milk
2 eggs, beaten
2/3 cup taco sauce
2 cups shredded sharp cheddar cheese
1/2 cup onion, chopped
2 garlic cloves, minced
1 4 oz can diced green chilies
1/2 lb lean ground beef, browned and drained
½ lb pork sausage, browned and drained (Hot or mild both work fine)


Combine creamed corn, cornmeal mix, oil, milk, eggs and taco sauce. Pour half of this mixture into a slow cooker which has been sprayed with cooking oil spray. Place cheese, onion, garlic, green chilies and browned meat over cornbread layer, then top with remaining cornbread mixture. Cover and cook on low for about 6 to 7 hours.
