Slow Cooker Pot Roast Monday, January 24, 2011

Ingredients

2 to 3 pound rump or bottom round or eye of round roast
1 can cream of mushroom soup
1 pkg dry onion soup mix
1/4 cup water
20 to 25 baby carrots
3 large potatoes (red or white) cut into chunks with skins on
Parsnips (optional but highly recommended)

Directions

Place beef roast in the slow cooker. Place vegetables around roast. Mix cream of mushroom soup, onion soup mix and water together. Pour over roast and vegetables. Cook on low for 8 to 10 hours.
