Ham and Spinach Couscous Tuesday, January 25, 2011
2 cups water
12 oz fully cooked ham, chopped
1 cup fresh spinach, chopped
1/2 tsp garlic salt
1 cup uncooked couscous
1/4 cup shredded cheddar cheese
In a large saucepan, combine the water, ham, spinach and garlic salt.
Bring to a boil. Stir in couscous. Remove from the heat; cover and
let stand for 5-10 minutes or until water is absorbed. Fluff with a
fork. Sprinkle with cheese.
Please note that this is also good without the ham. Proceed exactly as above, just leaving out the ham.
