Longlife Noodles for Chinese New Year Wednesday February 2, 2011
8 oz Chinese noodles for lo mein
½ lb cooked ham, cubed
½ lb shrimp, cooked and shelled (I use Food City precooked, frozen
1 cup celery, sliced
1 cup bell pepper, seeded and cut into strips
½ cup green onions, sliced thin
1 TBSP oil
2 or 3 TBSP soy sauce (to taste)
1 tsp sesame oil
Cook noodles according to pkg directions. Drain and set aside. In a wok or large heavy skillet, heat oil until very hot. Add vegetables and fry, stirring constantly, until tender crisp. Remove from skillet and add ham and shrimp and cook just to heat through. Stir vegetables back into the meat and mix with meat. Add soy sauce and sesame oil. Toss with noodles and serve at once.
Be sure not to break the noodles as you cook them or you will have bad luck. Also be sure to serve oranges with these because that is very lucky. Don’t ask me why. And Gong Xi Fa Cai !
