Pear Upside-Down Cake Friday, February 11, 2011
Ingredients
½ cup butter, melted
½ cup walnuts, chopped
½ cup brown sugar, packed
2 pears, peeled, cored and sliced
¼ cup butter
1/2 cup sugar
1 egg
1/3 cup molasses
1 ½ cups all purpose flour
½ tsp ground ginger
1 tsp ground cinnamon
½ tsp salt
½ tsp baking powder
¼ tsp baking soda
½ cup warm water
Directions
Pour melted butter into a 9 inch square baking pan. Sprinkle with brown sugar and nuts. Arrange pears over nuts in a nice pattern. Cream together the softened butter and sugar. Beat in egg and molasses. Combine dry ingredients and add to creamed mixture alternately with the warm water, beating well after each addition. Spread batter carefully over pears. Bake at 350 deg about 35 minutes or until it tests done. Cool for a few minutes before turning out onto a serving plate. Serve warm. Vanilla ice cream goes well with it.
