Ginger Bran Muffins Wednesday, February 16, 2011


2 cups all bran cereal
1 ¼ cups flour
1 tsp baking soda
¼ tsp salt
¼ cup sugar
1 egg
¾ cup buttermilk
2 TBSP fresh ginger, peeled and grated fine
2 TBSP cooking oil


Mix cereal with buttermilk and allow to stand about 5 minutes to soften. Beat the egg and the ginger into buttermilk mixture. Mix flour, soda, sugar and salt. Add the oil and the buttermilk mixture and mix just to moisten. DO NOT OVERBEAT. Spoon into muffin tins sprayed with baking spray. Bake in a 350 deg oven about 20 to 25 minutes or until brown.
