Rustic Apple Cheddar Tart Monday, February 21, 2011


3 medium Granny Smith Apples, peeled, cored and sliced
3/4 cup sugar
2 TBSP all purpose flour
2 TBSP butter
2 TBSP orange marmalade
1 sheet refrigerated pie pastry
1 egg
1 cup cheddar cheese


In a heavy skillet, heat butter over medium heat until melted. Mix flour with sugar and pour into apples, toss to coat. Place apples in the melted butter and cook over medium heat, stirring, until sugar is melted and apples start to cook. Continue to cook until apples are tender and juice has gotten very thick. Stir in marmalade. Spread pastry on a baking sheet with sides which has been sprayed with cooking oil spray. Place apple mixture in center of pastry. Fold sides up over apples, folding edges of dough over apples, leaving center open. Beat egg and brush over pastry. Bake at 400 deg about 15 minutes or until crust is just golden brown. Remove from oven, sprinkle with cheese and return to oven about 10 minutes or until cheese is melted and crust is nicely browned. Allow to cool a few minutes before cutting to serve.
