Whole Wheat Pancakes Tuesday, February 22, 2011
Ingredients
2 cups whole wheat flour
3 TBSP sugar or Splenda
1 tsp salt
2 cups milk (skim works fine)
1 TBSP baking powder
1/2 tsp vanilla
2 eggs
1/3 cup unsweetened applesauce
Directions
Mix flour, sugar (or Splenda), salt and baking powder. Beat eggs and mix in milk, vanilla and applesauce. Preheat griddle to medium heat, spray with Pam or equivalent, use 1/3 cup measuring cup for each pancake . Cook until bubbles appear on top, flip. Cook until brown. Serve with syrup, or chopped fresh fruit.
