Chicken with Roasted Vegetables Wednesday, March 2, 2011


4 boneless, skinless chicken breasts
½ lb broccoli florets
½ lb cauliflower florets
2 medium onions, peeled and quartered
1 zucchini, quartered lengthwise and cut into cubes
1 bell pepper, seeded and cut into large chunks


Spray chicken with olive oil cooking spray and salt and pepper lightly. Place in the four corners of a large baking sheet with sides which has been sprayed with cooking oil spray. Place into a 400 deg oven and allow to roast for 15 minutes. Remove from oven and spread vegetables in center of the pan in a single layer as much as possible. Spray with cooking oil spray and sprinkle lightly with salt, black pepper and Italian seasoning. Return to oven to roast an additional 20 minutes, stirring vegetables half way through.
