Chicken and Cheese Quesadilla Pie Tuesday, March 29, 2011

Ingredients

1 10 inch multi-grain flour tortilla
3 cups shredded chicken (Rotisserie chicken works well for this)
½ cup finely chopped cilantro
½ cup drained, pickled jalapenos, chopped
2 cups shredded cheddar cheese
¼ tsp each salt and pepper
2 eggs
1 cup whole milk
1/4 cup all purpose flour
1 tsp baking powder

Directions

Preheat oven to 450 deg. Grease a 9 inch pie plate. Press tortilla into prepared pie plate and lightly spray with cooking oil spray. Toss chicken, cilantro, jalapenos, 1 cup cheese , salt and pepper until well combined. Spread filling over tortilla. Whisk eggs, milk, flour and baking powder with ½ tsp salt until smooth. Pour evenly over filling and sprinkle with remaining cheese. Bake about 20 to 25 minutes or until surface is golden brown. Let cool about 5 minutes before cutting and serving.
