Country Ham Salad Monday, April 25, 2011


A Clifty Farm recipe

2 cups Clifty Farm Country Ham
1 cup diced celery
2 boiled eggs, chopped fine
1/2 cup each dill and sweet pickle relish
1 tsp mustard
Mayonnaise to moisten (I used low fat mayonnaise)


Grind or chop the country ham very fine. Mix with all remaining ingredients. Chill and serve on lettuce or in a tomato, avocado, or peach half. Or you could just spread it on toasted bread for a delicious sandwich.
