Linguine Casserole with Ham and Cheese Wednesday, April 27, 2011


8 oz whole grain linguine, broken in pieces
2 cups fully cooked lean ham
8 oz grated Swiss cheese, divided
1 can reduced fat cream of mushroom soup
1 cup reduced fat sour cream
1 small onion, chopped
1 small green pepper, chopped


Cook linguine according to pkg directions. Meanwhile, combine ham, 1 ½ cups cheese, soup, sour cream, onion and green pepper. Drain pasta and add to ham mixture. Stir to mix thoroughly. Turn into a 9x13 inch baking dish coated with
cooking spray. Cover and bake at 350 deg for 35 minutes. Uncover, sprinkle with remaining cheese. Bake 10 to 15 minutes longer or until cheese is melted and starts to brown.
