Cherry Upside Down Cake Friday, April 29, 2011


1 14 ½ oz can cherry pie filling
¼ cup butter flavored shortening
½ cup sugar
1 egg
1 cup all purpose flour
1 tsp baking powder
¼ tsp salt
1/3 cup low fat milk


Spray a 9 inch cake pan with cooking oil spray. Spread cherry pie filling in pan. Cream shortening with sugar. Add egg and beat to mix. Combine flour, baking powder and salt. Add to cream mixture alternately with milk beating well after each addition. Spread over cherry pie filling. Bake at 350 deg about 20 to 25 minutes or until brown and tests done. Cool for 10 minutes on a rack before inverting onto a serving plate. Serve warm. Nobody will be upset if you serve a little low fat vanilla frozen yogurt with it.
