Salsa Chicken Pie Wednesday, May 11, 2011
Ingredients
1 1/3 cups baking mix
¼ cup water
2 eggs
2 cups cheddar cheese, shredded
6 large boneless skinless chicken breasts, cubed
16 oz jar salsa (remember, I use salsaman)
Sour cream for garnish
Directions
Preheat oven to 400 deg. Spray a 9x13 inch baking dish with cooking spray. Mix baking mix, water and eggs to form a dough. Press into bottom of prepared dish. Sprinkle with 1 ½ cups cheese. In a non stick skillet, cook chicken over medium high heat, stirring, until it loses its color. Drain. Stir in salsa and heat until hot. Spoon over batter leaving about ½ inch uncovered on each side. Bake about 25 to 30 minutes or until edges are brown. Sprinkle with remaining ½ cup cheese and return to the oven until cheese is melted. (This will just take a couple of minutes). Loosen edges of pie and cut into squares to serve. Garnish each square with a little sour cream if you wish.
