Lucky Shrimp and Spicy Noodles Friday, May 13, 2011


1 8 oz pkg Chinese noodles
½ cup matchstick carrots
½ cup snow peas strings removed and sliced crosswise
½ lb frozen, peeled shrimp, thawed and tails removed
1/3 cup sesame oil
1/3 cup peanut butter (smooth or chunky)
3 TBSP rice vinegar
2 TBSP soy sauce
1 tsp crushed red pepper (or to taste)


Cook noodles according to pkg directions adding carrots and snow peas in the last minute of cooking to blanch. Drain. Rinse with cold water and allow to drain again. In a large bowl, toss noodle mixture and shrimp with 1 TBSP sesame oil. In another bowl, whisk together the remaining sesame oil, peanut butter, vinegar, soy sauce, and red pepper until fully mixed. Pour over noodle mixture and toss to coat completely. You can serve this immediately or allow to chill before serving.
