Savory Bread Pudding with Sausage Tuesday, May 31, 2011


8 or 9 cups of good bread cut into cubes
1 lb turkey Italian Sausage, cooked and cut into slices
8 oz sliced mushrooms
1 small onion, diced
1 cup celery, sliced thin
1 TBSP olive oil
2 TBSP Italian seasoning
2 cups shredded cheddar cheese
6 eggs
2 cups milk


In a heavy skillet, heat oil to medium and add onions, celery and mushrooms. Cook at medium high heat until onions are translucent and mushroom have given up their liquid. Toss bread, mushroom mixture, sausage slices, Italian seasoning and cheese. Spread evenly in a 9x13 dish. Whisk eggs thoroughly and whisk in milk. Add salt and pepper. Pour over bread mixture evenly. Cover with plastic wrap and refrigerate at least an hour or up to overnight. Allow to stand 30 minutes on the counter before placing in a 350 deg oven to cook for about 40 minutes or until puffed and brown. This will fall once it is out of the oven. Serve hot or at least warm.
