Easy Mississippi Mud Brownies Wednesday, June 15, 2011


1 9x13 inch size dark chocolate brownie mix
2 eggs
1/3 cup water
1/3 cup melted butter
½ cup semisweet chocolate chips
½ cup chopped pecans
3 ½ cups miniature marshmallows
½ container fudge cake icing


Mix the brownie mix, eggs, water, and butter thoroughly. Stir in chocolate chips and pecans. Turn into a 9x13 inch pan which has been sprayed with baking spray. Bake about 25 to 30 minutes or until set and firm to the touch. Immediately sprinkle marshmallows over the top of brownies and return to the oven about 2 minutes or until marshmallows have puffed. Allow to cool. While still just warm, heat cake icing in the microwave until it is liquid. Drizzle generously over the marshmallows and allow to cool completely before cutting into squares to serve. The topping will cut better if you chill the brownies before cutting. But they are excellent when they are warm and sticky.
