The Best Peanut Butter Cookies Friday, June 24, 2011


1 cup each, shortening and peanut butter
1 cup each, sugar and brown sugar
2 eggs
1 tsp vanilla
3 cups self-rising flour


Cream together the shortening, peanut butter and sugars. Add eggs and vanilla and blend completely. Add flour gradually and mix well. Shape into balls about 1 inch in diameter. Place about 2 inches apart on ungreased cookie sheets. Flatten balls with a fork to form a criss-cross. Bake about 10 minutes at 350 deg. Allow to cool a couple of minutes before removing to a rack to cool completely. Makes about 5 dozen and are appropriately eaten with a glass of milk.
