Tomato Salad Tuesday, June 28, 2011


1 pint grape tomatoes, halved (or two to three tomatoes, chopped)
1 lemon
1 cucumber, peeled, seeded and chopped
½ cup chopped flat leaf parsley
4 or 5 green onions, sliced
¼ cup basil, chopped
2 TBSP olive oil
salt and pepper to taste
½ cup cheese of choice (crumbled feta, cubed cheddar, cubed Swiss, etc)


Grate zest of lemon. Squeeze juice and add grated zest. Combine tomatoes, green onions, cucumbers, parsley, basil and olive oil. Add lemon juice and zest and toss. Let stand for a few minutes before serving. When you are ready to serve, toss cheese into salad.
