Red, White and Blue Parfaits Friday, July 1, 2011


2 cups strawberries sliced thin
2 cups blueberries
2 cups whipping cream
¾ cup sugar, divided


Sprinkle strawberries with ¼ cup sugar and set aside. Whip cream, whipping in ½ cup sugar. In a plastic picnic cup, put a couple TBSP whipped cream in bottom of glass, top with about ¼ of strawberries, top with whipped cream, top that with a layer of blueberries and finally a layer of whipped cream. Top each glass with a strawberry slice and a couple of blue berries. Serve chilled.
