Fruited Chicken Tossed Salad Monday, July 11, 2011


1 pkg prepared salad greens (either 50/50 mix or mixed baby greens will work or you could just cut your own favorite greens)
2 cups cooked chicken, cubed
4 or 5 peaches, peeled, seeded and sliced
1/2 cup slivered almonds, toasted

Citrus Salad Dressing:
1/2 cup orange juice
3 TBSP olive oil
2 TBSP cider vinegar
2 TBSP honey
1 tsp dried tarragon
½ tsp hot pepper sauce (or to taste)
Salt and pepper to taste


In a large salad bowl, combine the salad greens, chicken, peaches,
and almonds. In a jar with a tight-fitting lid, combine the
dressing ingredients; shake well. Drizzle over salad and gently toss
to coat.
