Asparagus Brown Rice Casserole Thursday, July 14, 2011
1 lb fresh asparagus
1 cup Uncle Ben’s Brown rice
2 cans cream of celery soup
salt to taste
1 cup Cheddar cheese, shredded
Cook rice according to pkg directions. Break off any tough parts of asparagus and cut into one inch pieces. Stir asparagus and soup into hot cooked rice. Add salt is needed. Pour into a 9x13 inch dish which has been sprayed with cooking oil spray. Sprinkle cheese over top. Bake at 350 deg about 35 minutes or until bubbly and brown on top.
This dish is easily converted into a main dish meal by adding about a cup of chopped chicken or cubed ham. It is also good which coarsely chopped hard cooked eggs.
