Pear Crisp with Cranberries Thursday, July 21, 2011

Ingredients

4 medium pears, peeled, cored and cut into cubes
¾ cup dried cranberries (I like the blueberry flavored craisins best)
2 TBSP lemon juice
¼ cup sugar
1 TBSP plain flour
1 tsp cinnamon
½ tsp nutmeg

Topping:
1/3 cup plain flour
1/3 cup old fashioned oats
1/3 cup light brown sugar, packed
¼ tsp salt
4 TBSP butter, softened

Directions

Combine pears and cranberries and drizzle with lemon juice. Combine sugar, flour, cinnamon and nutmeg. Pour into pear mixture and toss to coat. Pour into an 8 or 9 inch baking pan which has been sprayed with cooking oil spray. For topping, combine the flour, oats, brown sugar and salt. Stir in butter until crumbly. Sprinkle over fruit mixture and bake at 350 deg for 35 to 40 minutes or until bubbly and brown.
