2 cups self rising flour
¼ cup shortening
¾ cup buttermilk (approx)
4 cups cooked apples (use your favorite variety)
½ cup sugar
½ cup apple butter
Mix apples, sugar and apple butter and set aside. Blend shortening into flour until it resembles coarse crumbs. Stir in buttermilk to make a firm dough. Knead dough on a floured surface several turns. Divide into 4 pieces. Shape each piece of dough into a ball and flatten on the rolling surface. Using a rolling pin, roll the dough into about a 12 inch round. Place about 1 cup apple mixture off center on the dough. Fold the dough over apples and use a fork to seal edges. Trim off excess dough. Repeat with remaining pieces of dough. Heat butter or shortening in a heavy skillet (cast iron is best) and place the pies carefully into skillet. Using medium heat, allow the pie to cook until brown on bottom. Turn carefully and allow to brown on other side. Do not allow to brown too quickly or dough will not be cooked on inside. Serve hot or cold. Some vanilla ice cream doesn’t hurt it at all.
