Ginger Lemon Bars with Almonds Friday, August 5, 2011
Ingredients
2 cups plain flour
½ cup powdered sugar
½ tsp baking soda
¼ tsp salt
¾ cup cold butter
¾ cup slivered almonds
1 10 oz jar lemon curd
3 TBSP finely chopped candied ginger
Directions
Preheat oven to 350 deg. Combine first 4 ingredients in a large bowl. Cut in butter until crumbly. Toss in almonds. Reserve 1 cup of flour mixture. Press remaining flour mixture into bottom of a 9x13 inch pan which has been lightly sprayed with cooking oil spray. Bake for 15 to 20 minutes or until crust is lightly browned. Remove from oven and spread lemon curd over crust leaving a small border. Sprinkle with ginger and then with reserved flour mixture. Bake 15 to 20 minutes or until lightly browned. Let cool completely on a wire rack before cutting into bars.
