Grilled Pineapple Sundae Wednesday, August 10, 2011


1 pineapple, peeled, cored and cut into 1 inch slices
1/2 cup brown sugar
2 TBSP melted butter
2 TBSP lemon juice
1 tsp cinnamon
dusting of BKW Original Fire Seasoning (optional)
1/2 gallon vanilla ice cream


Combine brown sugar, butter, lemon juice and cinnamon and mix until even. Brush mixture over pineapple slices. Dust lightly with BKW seasoning (if using). Place pineapple slice on preheated grill over a medium high heat and grill for about 2 minute per side or until browned. Remove from grill and immediately top with a scoop of ice cream and serve. These are best if the pineapple is warm when you eat it.

Note: You can use this same recipe using peach or nectarine halves. DO NOT PEEL. Place on the grill cut side down and cook a couple of minutes. Do not turn. Remove to a bowl with 2 halves to a serving and proceed as above. If you like, you can simply scoop the peach out of the peeling or just leave it on.
