Orangesicle Cupcakes Monday, August 15, 2011


½ cup butter, softened
1 cup shortening
2 cups granulated sugar
4 large eggs
3 cups cake flour or sifted all purpose flour
2 tsp baking powder
½ tsp salt
1 cup buttermilk
1 tsp vanilla
1 TBSP orange juice
1 TBSP orange zest

Orange Frosting:
½ cup butter, softened
½ cup shortening
2 tsp orange juice
1 ½ tsp orange zest
½ tsp vanilla extract
4-5 cups powdered sugar
2 drops orange gel food coloring

Orange sprinkles
Candy orange slices


Cream butter and shortening until fully mixed. Cream in sugar. Beat in eggs. Mix dry ingredients and add alternately with the buttermilk. Stir in vanilla, orange juice and zest. Pour into muffin pans which have been sprayed with baking spray or lined filling 2/3 full. Bake at 350 deg about 20 to 25 minutes or until browned and test done. Cool.
Cream butter and shortening. Add orange juice, zest and vanilla. Beat in powdered sugar until reaching spreading consistency. Add color by drops until you reach desired color. Spread on cooled cupcakes. Decorate.
