1 cup self rising cornmeal mix
1/2 cup grated Parmesan cheese
½ cup grated sharp Cheddar cheese
1 TBSP minced fresh parsley
1 1/2 tsp dried oregano
1 1/2 tsp dried basil
1/2 tsp salt
1/4 cup vegetable oil
1 small onion, chopped
3 medium zucchini, coarsely grated or very thinly sliced
In a bowl, combine the cornmeal mix, Parmesan cheese, Cheddar cheese parsley, oregano, basil and salt. Combine eggs, oil and onion; stir into dry ingredients just until combined. Stir in zucchini. Transfer to a greased 9x13 inch baking dish. Bake at 350 deg for 30-35 minutes or until golden brown and set. Cut into squares. Serve warm.
This will also work nicely with a different texture if you substitute 1 cup baking mix instead of the cornmeal.
