Cookies with Cereal, Fruit and Nuts Friday, August 26, 2011
Ingredients
1 cup all purpose flour
½ cup flax seed meal
1 tsp each, baking powder, soda and cinnamon
1 cup butter, softened
1 cup each sugar and brown sugar (packed)
2 eggs
1 tsp vanilla
2 cups whole wheat cereal
2 cups old fashioned oats
1 cup chopped walnuts
1 cup dried cranberries, raisins or diced mixed dried fruit
Directions
Heat oven to 325 deg. Combine flour, flax see, baking powder, soda and cinnamon. With the electric mixer, beat butter until soft. Add sugars and continue to beat until well combined. Scrap down sides of bowl. Beat in eggs and vanilla. Beat in flour mixture. By hand, stir in cereal, oats, walnuts and fruit. Drop of heaping tsp about 2 inches apart on baking sheet lined with parchment paper. Bake about 12 to 14 minutes or until just set. Allow to cool on baking sheet a couple of minutes before removing to a rack to cool completely.
