Southwestern Flavored Meatloaf Monday, September 12, 2011


2 lbs lean ground beef
1/2 lb Chorizo (Mexican Sausage)
1 cup Ritz type crackers (broken into small crumbs)
2 large eggs
½ cup salsa, drained (use mild or hot to suit your taste)


Remove sausage from its peel and crumble. Place all ingredients in a large bowl. Mix well, using your hands to knead the ingredients together .Once all ingredients are mixed together, form into a nice loaf pressing it together firmly. Place into baking dish and cook in a preheated 350 deg oven about 45 to 50 minutes or until nicely browned and the juices run clear. Allow to cool before slicing.
