Easy Chicken Pot Pie Monday, October 10, 2011


2 cans condensed cream of chicken soup
1 16 oz pkg frozen mixed vegetables, thawed
2 cups cubed cooked chicken (I use rotisserie chicken)
3/4 cup milk
2 eggs
2 cup all-purpose baking mix


Heat oven to 375 deg. Stir the soup, vegetables and chicken together and pour into a 9x13 inch baking dish. Stir the milk, egg and baking mix in a small bowl. Spread the batter over the chicken mixture. Bake for 30 minutes or until the topping is golden brown. Serve hot.
