2 sweet potatoes
4 white potatoes (Yukon Gold is nice but not essential)
8 small red potatoes
olive oil cooking spray
Salt and pepper to taste
Preheat oven to 400 deg. Peel and cube the potatoes and the sweet potatoes into even sized cubes. Scrub the red potatoes and cut into cubes of about the same size as the other potatoes. Spray a large baking sheet, with sides, with cooking spray. Spread potatoes evenly on the tray in a single layer. Spray potatoes with the cooking spray. Sprinkle with Italian seasoning, salt and pepper. Roast until potatoes are brown and cooked through which will take about 20 to 25 minutes, stirring once about half way through. Serve warm.
